Cherries Jubilee is a dessert consisting of dark red cherries and liqueur, usually Kirschwasser which is a cherry brandy. This combination is then flambéed and poured over vanilla ice cream. This desert was created by August Escoffier in honor of Queen Victoria's Jubilee celebrations. This posh desert is typically served in a chafing dish tableside in fine restaurants which makes for a very elegant presentation. Cherries Jubilee was very popular in the 1930's and all the way through the 1960s. It was known as a stylish desert for fancy dinner parties. This is not surprising since the deep red velvet color of the cooked cherries coating creamy white ice cream is very reminiscent of royalty.
